Extra special

Hot Fruit Tea from the hubby and ensaymada from me. Simple things are extra special when shared with a love one.

*Hot Fruit Tea:
-- 2 bags of Lipton Yellow Tea bag
--Fruits: (Whatever you have) Lemon, Apple, Orange
--Sugar and hot water

*Ensaymada from Rustan's Supermarket.

Mini pizza!

We started to crave for pizza a few days ago and since I have free time in my hands, me and the little angel made some mini pizzas. We always use the traditional pinoy pandesal but this time, I wanted to try something else. I used the lemon square ready made pizza crust and boy there were so perfect. Ingredients are pretty much simple.

1. Lemon square pizza crust or any bread you prefer.
2. Del Monte - Quick n' Easy sweet pizza sauce. It's also available in Italian but we prefer the sweet one.
3. Eden cheese.
4. Toppings: Ham. Hot dogs and luncheon meat tastes great too.
5. Optional: veggies, pineapples etc.

Procedure: Lay out the pizza crust, spread out the pizza sauce, put the cheese and top with your choice of toppings. Easy! And it's fun to do too.

They are also nice to look at especially in a big plate. The little angel was so excited, she even bit the side of the crust.

~ I just popped them in our little oven toaster while I prepare some drinks. ~

I let the mini-pizzas cool down a little bit so she can enjoy without burning her lips. Can you believe she even posed when I asked her to.

Recipe: Creama de Fruta

Okay, so here's the *feeling-chef* in me again trying to make a delightful work of art. But this is so easy and I believe all you already know how to do this hehehe. It's just that, Christmas is around the corner and I feel it's Creama de Fruta time once again! So here's how I do it.

Ingredients:
~ Everything you need is on the photo already. 2-packs of Graham crackers, 2-packs of Nestle Cream, 1-can Del Monte Fruit cocktail (or any fruit like peaches etc), 1-can Milkmaid.

~ goodies... ~

1. In a separate bowl, mix the 2-packs of nestle Cream and Milkmaid. Mix well. After this, I place the mixture inside the freezer for at least 5 minutes or more so I could have a slightly thick cream texture.

~ Mixing in progress... ~

3. Drain the fruit cocktail in a separate bowl and set aside. Prepare and line up the graham crackers to any rectangular pan or pyrex and put the cream mixture. Do this until you have 4 to 5 layers.

~ Building a good foundation.... ~

4. Leave a small amount of cream mixture and mix the drained fruit cocktail in it. Top this fruit mixture on the Graham foundation. Others pour gelatin to prevent the fruits from going else where. You can do that too if you want.

~ Almost done... ~

You can eat the Creama de Fruta after a good 3-4 hours inside the fridge. This will give the graham cracker time to soften to a cake-like texture. Enjoy!

Recipe: CHICKEN AND CHEESE ENCHILADAS

I have a secret passion for cooking and baking but I never had time. I love watching Lifestyle Network especially the cooking shows like Barefoot Contessa, Molto Mario, Wolfgang Puck, 30-minute meal, Rachel Ray show, Everyday Italian, Boy meets Grill (Bobby Flay) and Iron Chef America. My mom used to tell me not to watch 'coz it will make me hungry hahaha! Anyway, I tried baking... unfortunately it didn't went well. I made crinkles but they were hard as a rock --for real.

I received a new letter with recipe from Nestle club last week. I decided to try their Chicken and cheese Enchiladas. I bought the ingredients the other day and just this evening, we were happily eating my master piece. Yes- hubby and my sister liked it.

Try it! It's delicious!

~ ~ ~ ~ ~ ~ ~ ~~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~ ~
Preparation Time: 15 minutes.
Cooking time: 25 minutes (including boiling chicken)
Servings: 8

Ingredients:
Filing--
1 - can cream of mushroom soup
1 - 378 ml CARNATION Evap
1 - tbsp Cornstarch
1 - 250 g NESTLE SOUR CREAM
3 - pcs boiled chicken breasts, cubed or flaked.
2 - pcs Green bell pepper, diced
8 - corn or plain Tortillas
1 - cup shredded cheddar cheese

Procedure:
- Mix all the ingredients for filling together in a medium saucepan and cook over medium heat for about 15 minutes, stirring constantly.
- Next, top each tortilla with 1/4 cup of filling and roll the tortillas. Place them in a row onto a 9x13 inch baking dish.
- Pour the remaining filling over the stuffed tortillas then sprinkle with shredded cheese on top.
- Bake in a 350F degrees (175C degrees) oven until cheese on top is melted.
- Serve while hot.

GOOD TO REMEMBER:
Serve the enchilada with fresh tomato salsa and shredded lettuce or cabbage to increase you fiber intake.
